Huver is a third-generation coffee grower whose path to coffee began only recently. Before 2015, he worked as a math teacher in Nariño. Today, he works alongside his father at El Paseo, a family farm near Buesaco on the Suma Paz trail. Owned by the family for more than 20 years, El Paseo is one of three farms they manage and sits at elevations ranging from 1,750 to 1,950 meters, with native shade trees overlooking the Buesaco valley.
Rocket Flower coffee begins with hand-selected ripe Caturra cherries. Following a 36-hour pre‑fermentation in cherry, the coffee is floated and disinfected with a 2% sea‑salt solution, then fermented anaerobically in stainless steel tanks. Enzymes are added to enhance floral notes during a six‑day fermentation. The coffee is mechanically dried at low temperatures, stabilized for 15 days, and finished with a profile of lemongrass, citrus, cocoa, coffee blossom, and sweet floral aromatics.
